Thai Beef Massaman Curry

I made this last night and have to say it is very tasty and not too much effort as you chuck everything in the casserole pot and just leave to cook in the oven for two hours. Not too spicy so a good family favourite although we did sprinkle a little fresh chilli over the top to spice it up a it. Serve with thai rice and some naan bread. I’ve always bought lime leaves in a little spice jar from Tesco but my Thai friend tells me it is better to buy frozen leaves from an oriental supermarket if you have one nearby. Tesco also sell the tamarind paste and the massaman paste.

This makes enough for 8 so enough for a family meal and the same again for the freezer.

Ingredients:

  • 1 tbsp oil
  • 2 onions
  • 600g waxy potatoes
  • 10 kaffir lime leaves
  • large cinnamon stick
  • 2 tbsp light brown sugar
  • 2 tbsp tamarind paste
  • 1.2kg stewing beef
  • 7 tbsp massaman curry paste
  • 400ml coconut milk
  • 160m coconut cream
  • half a can water
  • 2tbsp fish sauce
  • pinch salt
  • 90g packet peanuts
  • 1 red chilli (optional)
  • thai jasmine rice to serve

Directions:

  1. Preheat the oven to 180C/ 160C fan / gas 6 and begin by prepping everything.
  2. Peel and finely slice the onions, peel and chop the potatoes into inch chunks and chop the meat into big inch chunks. Chop (or bash in a bag) the peanuts roughly.
  3. Heat the oil in a large casserole pan and fry the meat over a medium heat until browned – not too much. Add the massaman curry paste and stir until the meat is well coated.
  4. Now add the onions, potatoes, lime leaves, cinnamon stick, tamarind paste, coconut milk and cream, water, fish sauce, sugar and most of the peanuts (leave some for garnish).
  5. Give it a good stir, bring to the boil and transfer to the oven for 2 hours, stirring after one hour.
  6. Sprinkle over some fresh chillis, the last few peanuts and serve with Thai rice.
