    Thai Beef Massaman Curry

I made this last night and have to say it is very tasty and not too much effort as you chuck everything in the casserole pot and just leave to cook in the oven for two hours. Not too spicy so a good family favourite although we did sprinkle a little fresh chilli over the top to spice it up a it. Serve with thai rice and some naan bread. I’ve always bought lime leaves in a little spice jar from Tesco but my Thai friend tells me it is better to buy frozen leaves from an oriental supermarket if you have one nearby. Tesco also sell the tamarind paste and the massaman paste.

This makes enough for 8 so enough for a family meal and the same again for the freezer.

Rustic Pork Rillettes With Crusty Bread

This is a recent Rachel Allen discovery with is great for lunch with some fresh bread but could also be a good starter for an informal rustic dinner party menu and the added bonus it it is really cheap to make but is delicious and impressive. Perfect for the credit cruch dinner party! You need to plan ahead as it needs to cook for 5 hours and cool but it should keep for a few weeks. Don’t be shy about making a full batch – initially I made a half batch and the whole lot went over one weekend.

Don’t worry about how fatty the meat looks as this will all melt away in the cooking leaving a course pate texture. In fact, the fattier the better and you need the belly pork boneless with the rind (ask your butcher to cut it off and pop it in the bag for you). Fresh nutmeg is a must – you could invest in a fab nutmeg grinder as a treat but there are many on the market.

This is a great dish for the whole family as well as being an inexpensive mid week meal. It looks impressive and tasted delicious. I cook it for about an hour and a half but it can be left for two hours if needed so great if you need to pop something in the oven and come back later. (Perfect if I’m going to watch my daughter play netball after school).

Best served with a jacket potato which you can put in the same oven for the same duration just splash olive oil and a little sea salt on them. Cabbage is also a great accompaniment.

You can use loin pork chops which are leaner but I like to use pork shoulder chops as they have a marbling of fat that melts away in the cooking process and they are cheaper. You can add mushrooms if you fancy or it works well with a peeled apple chopped and added for sweetness. Be careful to use dry cider (Strongbow is good) – I have used Magners before and found it a bit sweet.

    Boeuf Bourguignon

I have tried umpteen different methods for this recipe, including pre-marinating the night before etc., but this one works well and although delicious on the day, the finished article still benefits from a day or two in the fridge.
