Spicy Piri Piri Chicken

This is part of one of Jamie’s recipes in 30 Minute Meals but done slightly differently as I would rather it slow cooked in the oven than quickly cooked (which is required if you need it in under 30 minutes). I love Jamie’s recipes and this one doen’t disappoint. He uses one chicken thigh per person but I think two is better as they are not the meatiest cut but certainly one of the tastiest. You want skin on bone in for this.

Serve with tasty feta boiled potatoes.

  • 8 chicken thighs, skin on, bone in
  • 1 red pepper
  • 6 sprigs fresh thyme
  • olive oil for frying
  • 1 red onion
  • 4 garlic cloves peeled
  • 1 large red chilli deseeded
  • 2 tbsp sweet smoked paprika
  • 2 lemons
  • 3 tbsp white wine vinegar
  • 2 tbsp Worcestershire sauce
  • handful freash basil


    • Preheat the oven to 190C/170C fan)/gas 5
    • Trim the chicken thighs of any excess fat, score through the skin a couple of times on each one then drizzle with olive oil and season well. H.eat a large frying pan to medium heat and add the chicken skin side down. Leave this for 5 minutes while you slice the red pepper. Add the red pepper, turn the chicken over and then prepare the sauce.
    • Zest and juice the lemons and add to a food processor with the onion, garlic, chilli, paprika, white wine vinegar. Worcestershire sauce, basil and a splash of water. Add some salt and pepper then blitz till smooth.
    • Spread in the bottom of a suitable oven proof dish.

    • Add the chicken (skin side up) and peppers and bake for about 30-40 minutes until golden (and hopefully crispy).
    • Serve with boiled feta potatoes and a rocket salad.
