Easy Homemade Pesto

This is a great recipe for homemade pesto that takes minutes to make and can be stored in the fridge for up to two weeks in an airtight container. It makes a great quick lunch for the kids with a bit of pasta or can be used for crostini with a bit of parma ham on – very quick canapes!

Easy Homemade Pesto

Ingredients:

  • 80g pine nuts
  • 2 cloves garlic
  • 70g parmesan
  • 20g basil leaves
  • 100ml extra virgin olive oil
  • black pepper and Maldon salt

Directions:

    • Begin by toasting the pine nuts in a pan in a little oil over a medium heat till golden.
    • Peel the garlic and roughly grate the cheese.
    • Blitz all ingredients in the food processor until smooth.
    • Place in an airtight container and pour over a little more oil to seal it.
