This is a real 20 minute meal which is great for mid week. It is also very adaptable as far as you can chuck anything you fancy in to your warm couscous. This is a simple version but with a bit more time you could roast some red onions, peppers, courgettes and tomatoes and put them in instead of the spring onion. These pork chops are always on offer in Tesco and aren’t expensive.
Honey and Mustard Pork With Warm Couscous

Ingredients:
- 4 large pork loin chops
- 4 tbsp runny honey
- 5 tsp English mustard
- splash orange juice
- salt and pepper
- 300g couscous
- 450ml hot chicken stock
- bunch spring onions
- 2 cloves garlic
- punnet cherry tomatoes halved
- 2 tbsp olive oil
Directions:

- Put your grill on to warm up as you want it nice and hot and put the kettle on for the hot stock.
- Mix the mustard and honey together then add your splash of orange juice to loosen it. Smear all over the steaks and place on a grill pan lined with foil. When the grill is hot, place under. They need at least 5 minutes each side – until brown and the fat is crispy.
- Meanwhile crush the garlic in to the raw couscous, add the chopped spring onion, the olive oil and the stock. Mix once, add a lid and leave for 8 – 10 mins or until the pork is ready.
- Fluff up the couscous with a fork and stir in the tomatoes, then season. Spoon onto a warmed serving dish and top with the steaks and pour over any pan juices.
