Valentine’s Day Shortbread

This is a lovely idea for Valentine’s Day and is the easiest thing ever! My girls have made them for their Dad in the past (but always seem to end up eating most of them themselves!)

  • Yield: 16
  • Difficulty: easy

Ingredients:

  • 125g/4oz softened butter
  • 55g/2oz caster sugar
  • 180g/6oz plain flour

Directions:

    1. Heat the oven to around 190°C / 375°F / Gas mark 5.
    2. If your butter is hard just flash it in the microwave. You don’t want to melt it – just soften it.
    3. With a whisk beat the sugar and butter together until pale yellow – this shouldn’t take long.
    4. Add your flour and mix. It should all come together into a dough eventually.
    5. Roll it out with a rolling pin until 1 cm thick. Cut into any shape but hearts are good for Valentines! It helps if you chill the tray in the fridge for 15 mins.
    6. Bake for about 15 – 20 minutes, cool on a rack then sprinkle with icing sugar
    7. Yum – ready to eat!
