Juicy King Prawn and Chorizo Skewers

These are so simple to prepare but taste totally delicious – the juicy prawns with the sweet paprika in the chorizo sausage work really well together and can be served as canapes on cocktail sticks. You could also  throw them on the barbecue in the summer. The secret to this is getting really good quality prawns – the best I have found are at Farmfoods – Jumbo Raw King Prawns 2 packets for £12 with 600g in each. I use Tesco’s Finest Chorizo Ring.

I tend to put the prawns in the marinade the night before but a couple of hours should be enough.

Juicy King Prawn and Chorizo Skewers

Ingredients:

  • 16 large raw prawns
  • about 120g chorizo sausage
  • 2 cloves garlic
  • 1 red chilli
  • 1 lemon
  • dash olive oil
  • Maldon salt and black pepper

Directions:

    • Peel and chop the garlic, finely chop the seeded chilli and zest and juice the lemon.  Mix the garlic, chilli, lemon juice and chopped lemon zest together with the dash of oil and a bit of salt and pepper and pour over the prawns. Leave overnight or up to 2 hours.
  1. Easy Prawn and Chorizo Spicy Skewers

    • 15 minutes before you need them, slice the chorizo into 16 slices and skewer one prawn and one piece chorizo onto a cocktail stick. Repeat with all of them then pour the marinade over.
    • Heat a large frying  pan to hot with a dash of olive oil. Fry the skewers for a couple of minutes each side until cooked through. Tip the rest of the marinade in whilst cooking.
    • Serve immediately.

    Hi Heidi, Sarah and Fliss here, just trying out your prawns for a barbie tonight. I’m sure they will be amazing, but not quite as good as yours!
