Prawn Toast

This is great as nibbles or even a starter. It is very simple, easily prepared in advance but does need frying at the last minute. Serve in triangles or bite sized pieces. This is enough to make 3 slices of bread so enough for 4 for a starter and maybe 6 as nibbles.

You will need a food processor to blend the mixture. The bamboo shoots come in a tin from the Supermarket and the rest can be used in any type of stir fry to add crunch.

  • Yield: 24 nibbles or 12 triangles
  • Difficulty: easy

Ingredients:

  • 150g raw large prawns
  • 40g bamboo shoots (in a tin)
  • 1 clove garlic, peeled
  • 1 egg white
  • 1 tsp cornflour
  • 1 thumb sized piece fresh ginger peeled and chopped
  • dash sesame oil
  • dash soy sauce
  • 1 spring onion
  • salt & pepper
  • 3 slices thick white bread
  • sesame seeds

Directions:

    • Put the first 9 ingredients in to the food processor with a little salt and pepper and blitz till smooth. This paste can then be frozen till required or chilled till later.
    • 15 minutes before needing to serve spread the thick white bread generously with the paste on one side, sprinkle a few sesame seeds over the paste side and fry for a few minutes each side over a medium heat (not too hot – you need it cooked through).
    • Drain on kitchen paper, cut into triangles or squares and serve immediately.
